Rich in dietary fibre. A good source of complex carbohydrates, protein and B vitamins. Less than 2 % fat. Evidence that Barley grain contains a substance that inhibits cholesterol production in both humans and animals.

Barley Bran Back to User / Recipes

*    Produced by  stone milling the whole barley grain, then sieving out the inedible husk ( or spikelets ) and the barley flour.
*    Rich in nutrients and dietary fibre.
*    Evidence that it inhibits cholestrol production in humans and animals.
*    Must be refrigerated or frozen to retain freshness.
Uses:  Add to baked goods, to increase content of dietary fibre. As an ingredient in muesli Sprinkle on cereals

Barley Flour Back to User / Recipes

*  Produced by stone milling the whole barley grain and sieving off the outer layer of the grain & some of the bran.
*  More nutrient-rich than most available barley flour which is made from pearled or refined barley
*  Low in Gluten
*  Must be refrigerated or frozen to retain freshness
Uses:  Must be mixed with other flours to make a yeast raised bread. Can be substituted for wheat flour in           quick breads, scones  etc Use as a thickening agent

Buckwheat Back to User / Recipes

Although often classed with cereal grains, buckwheat is not a true grain but the fruit of an herbaceous plant.
Extremely nutritious:  High in protein supplies the B vitamins and several minerals and contains no fat. Rich in dietary fibre.  Gluten free. Very intensely flavoured grain.
