Maize or Corn Back to User / Recipes

A versatile grain. Rich in dietary fibre. A good source of complex carbohydrates, B vitamins, vitamins C & A  (the yellower the corn the more vitmin A ) and potassium. The germ is rich in protein.

*  The whole maize grain or kernels
Uses:    Home grinding.

Mealie Meal Back to User / Recipes

*  Produced by coarsely milling white maize grain into a meal.
*  A staple food of many African peoples.
Uses:    As a porridge meal

Maize Meal ( Corn Meal ) Back to User / Recipes

( often fashionable known as " Polenta " )
*  Produced by coarsely stone milling the yellow maize kernal into a gritty textured meal.
*  Unlike most available cornmeal, the oily, protein rich germ has not been removed
*  Must be refrigerated or frozen to retain freshness
Uses:  Commonly used for pancakes, muffins & quick cornbreads Sometimes added to yeast bread,             particularly pumpernickel To make " polenta " a " mush ' of cornmeal, water and maybe salt and butter, served either soft or set

Popcorn Back to User / Recipes

*  A particular variety of corn which has a high hard starch content that " explodes " through the hull when heated - gives excellent popping results.
*  An excellent alternative to high fat snacks
Uses:      To make popcorn heat 1 tablespoon Sunflower Oil in a heavy pan add 1/2 cup popcorn and cook moving pan constantly for 2 minutes season popcorn while hot with herbs and spices or parmesan cheese, salt or butter.

Maize Flour Back to User / Recipes

*  Produced by finely milling the yellow maize kernel into a soft yellow flour.
*  Gluten free
*  Must be refrigerated or frozen to retain freshness
Uses:  Thin flat tortillas and corn chips Must be combined with gluten rich flour to make yeast raised breads.
